1 lb shrimp 4 tbs blackening seasoning
3 large tomatoes 1 large onion
3 cloves of garlic 4 fresh basil leaves
1.5 cups sugar 4 sausage links
1 red pepper 1/2 cup white wine
2 cups heavy cream 2 cups of grits
2 cups water 2 cups heavy cream
4 tbs butter 1 cup cheese
4 tsp salt
Deshell shrimp putting the shells into a pot, cover with water and simmer for 15 minutes. Meanwhile chop onion into medium sized pieces, mince the garlic and sweat in a pan on low for 3 minutes. Add basil leaves, tomatoes, sugar and simmer for another 10 minutes or until tomatoes have broken down. Chop pepper and sausage then saute in a pan until sausage has color. Deglaze with wine, add the stewed tomatoes, 1/2 of cream, and simmer until cream has thickened. Season cream to taste. In another pot bring cream, water and butter to a boil. Whisk in grits and cook until tender. Finish with cheese, 1 tsp of fresh basil and garlic. Sprinkle shrimp with blackening seasoning and cook on each side for 3 minutes.
